Today is National Sushi Day, and the history of the modern day sushi style dates back to the early 1800s. A man by the name of Hanaya Yohei is the one largely credited as being the inventor of the nigiri sushi. As Micah Quinn explains, the popularity of sushi in Canada is stronger than ever. The owner of the Edo Japan locations in Lethbridge, Michael Esquivel says, "Your base on sushi is going to be seaweed, rice, and vinegar. From there, it's the whole world you can add on. Sushi is very versatile."
